Pasta Primavera with Asparagus & Peas

With its beautiful bright green colors and aromatic tarragon, this pasta primavera earned 5* ratings on NYT Cooking site. After making this dish I can see why everyone loves it. It’s loaded with fresh asparagus, snap peas and green peas. Fresh tarragon is what makes this dish special.

The pasta I used (Mafaldine) is wide and flat with ruffled edges. It has a striking appearance when cooked and works well with many pasta dishes. The original recipes calls for fettuccine or tagliatelle which are much easier to find. If you want to try malfadine, you can find it at Amazon. Fresh tarragon can be found at Whole Foods.

Pasta Primavera (Spring in Italian) is a dish that combines lightly cooked vegetables with fresh herbs. Now that spring has passed and summer is here, it’s still a perfect time to find fresh asparagus at the markets. Sugar snap peas seem to be available year round as well as peas (frozen). I bought a well known brand of frozen peas that were chalky and had no flavor. I searched online for reviews of peas and found multiple top ratings for Woodstock Organic Peas. They are sweet and have a nice texture. So these are the only peas I buy now. You can find Woodstock Organic Peas at Hawaiian Moons on Maui.

Serve your pasta primavera with focaccia or good sourdough bread and you have the perfect summer meal.

Pasta Primavera with Asparagus & Peas

Ingredients

  • 1/4 pound sugar snap peas, stems trimmed

  • 1/2 pound asparagus, woody ends trimmed

  • 2 tablespoons Earth Balance Buttery Sticks or unsalted butter

  • 3/4 cup frozen peas, defrosted

  • 1/4 cup thinly sliced shallot

  • 2 garlic cloves, finely chopped

  • kosher salt

  • freshly ground black pepper

  • 10 ounces mafaldine, fettuccine, or tagliatelle

  • 2/3 cup finely grated Parmigiano Reggiano + more for serving

  • 1/2 cup warm half and half (I used Organic Valley Lactose Free)

  • 3 tablespoons finely chopped flat leaf parsley

  • 1 tablespoon finely chopped tarragon

Directions

  • Bring a large pot of salted water to a boil.
  • While the water is coming to a boil, slice snap peas and asparagus spears into 1/3-inch wide pieces; leave asparagus tips whole.
  • Melt Buttery Sticks or unsalted butter over medium-high heat. Add snap peas, asparagus, and shallots. Cook until vegetables are barely tender (not soft or mushy), about 3 minutes. Stir in peas and garlic and cook 1 minute more. Season with salt and pepper. Transfer to a large bowl and set aside.
  • Cook pasta until al dente. Drain pasta and transfer to the bowl with vegetables. Immediately toss pasta with vegetables, Parmigiano Reggiano, half and half, and herbs. Season generously with salt and pepper to taste. Grate extra cheese over the top before serving.

Spinach, Cheddar & Sun-Dried Tomato Scone

I’ve made a variety of different scones, but I’m always up for another one and this time it’s a savory version.  Using fresh spinach is ideal.  It doesn’t get soggy and the deep green color makes these scones pop.  I love the complex, bold flavor that sharp cheddar adds to each bite.  Scones can be made on the fly which is a very good thing.  From the time you gather your ingredients, make the dough and bake the scones, you will have spent less than 1 hour of your time.  And, you will be rewarded with 8 large yummy scones.

I had a large jar of sun-dried tomatoes in the refrigerator so I added a few to the dough along with the spinach, cheddar and a few chopped chives.  I also baked some scones without the sun-dried tomatoes and chives and both versions are delicious.

For uniformity you can pat the dough into an 8-inch cake pan then invert it onto a parchment-lined cutting board before slicing it into wedges.  You can skip this step and form your own rustic round then slice the dough into wedges.

Spinach & Cheddar Scones

I love how the cheddar melts and makes lacy, crispy edges around the scones. These are best served warm when the cheese is still soft.  I regularly freeze mine and warm them up in the microwave for a snack.

This recipe is quite flexible.  You don’t necessarily need sun-dried tomatoes or chives.  The scones will still be so flavorful.  Just be sure to use a good sharp cheddar.

Spinach Cheddar & Sun-Dried Tomato Scones

Ingredients
  • 2½ cups all-purpose flour
  • 3½ teaspoons baking powder
  • 1 teaspoon kosher salt (1¼ teaspoons if using unsalted butter)
  • 1 tablespoon sugar
  • ½ cup cold Earth Balance Buttery Sticks (or regular unsalted butter) cut into small pieces
  • 2 cups roughly chopped fresh spinach (not packed)
  • 1 heaping cup sharp cheddar, diced small
  • ⅓ cup chopped sun-dried tomatoes in olive oil, drained (optional)
  • 1 tablespoon chopped chives (optional)
  • 1¼ cups Organic Valley lactose free half and half (or regular half and half) + more for brushing the tops of scones
Preparation
  1. Preheat oven to 450 degrees. Line a half sheet pan with parchment paper. Line the bottom of an 8-inch cake pan with parchment paper, lightly butter or oil pan.
  2. In a large bowl, whisk together the flour, baking powder, salt and sugar. Cut the Buttery Sticks into the flour mixture using a pastry blender, fork, or your fingers, until the chunks of butter are the size of small peas. Place the bowl in the freezer for 5 minutes. This helps to firm up the Buttery Sticks which helps to create tender scones.
  3. Remove the bowl from the freezer and stir in the spinach, sun-dried tomatoes and chives. Add the half and half and stir until the dough is moistened. Turn out the dough onto a lightly floured surface and gently form into a disk. Transfer the dough to an 8-inch cake pan (bottom lined with parchment paper and pan lightly oiled). Pat the dough gently to fit the pan. Invert the dough onto a lightly floured parchment lined cutting board, remove parchment round. Slice the dough into 8 wedges. Transfer the wedges to your half sheet pan. Brush the tops of the wedges with a bit of half and half. Bake for 11-12 minutes or until the scones are golden brown. Let scones cool on the pan for a few minutes before transferring to a rack to cool. Scones can be frozen.

Mocha Madness Ice Cream

Being lactose intolerant is a culinary challenge, particularly when dining out.  Virtually all restaurants use dairy products in most of their dishes.  This is especially true with dessert menus.  So I rarely order sweets.  However, with so many lactose free dairy products now available, making homemade ice cream has become a real treat. This delicious ice cream is made with Organic Valley lactose free half and half (of course you can use regular half and half).  It has become one of my favorite desserts.  

Three ingredients make this ice cream so exquisite: chocolate, espresso powder, and bits of Oreo cookies.  These ingredients tie it all together to make the perfect combination of flavors.

The Oreos are stirred in just before freezing the ice cream.  Transfer the ice cream to a plastic container and freeze until firm.

Ingredients
  • 3 cups cold lactose free half and half (or regular half and half),divided
  • ¾ cups sugar
  • 2 tablespoons espresso powder
  • 2 tablespoons cocoa powder, Dutch process preferred
  • ¼ teaspoon xanthum gum (optional)
  • 1 teaspoon vanilla extract
  • 10 Oreo cookies, broken into small pieces
Preparation
  1. Whisk together 1 cup of the half and half, sugar, expresso powder, cocoa and xanthum gum. Stir in the remaining 2 cups of half and half and the vanilla extract.
  2. Transfer bowl to the freezer for about 10 minutes, until mixture is nicely chilled.
  3. Transfer mixture to your ice cream maker and churn according to your manufacturer's directions, 20-25 minutes. Stir in cookie bits and transfer ice cream to a plastic container. Freeze for at least 4 hours or overnight before serving.
