This is a quick and tasty breakfast. The tortilla is toasty and crispy while the filling is oozy with egg and cheese. The spinach plays an important role adding an extra bit of nutrition and pop of gorgeous green color.
This yummy quesadilla is not limited to just for breakfast. It would make a delicious lunch or dinner alongside Mexican rice and Cuban style black beans.
I keep a package of Tortilla Land flour tortillas in my freezer for quick meals. I cook them all at once then freeze them in a zip top bag. They last for months this way and are so convenient to have around. Use your favorite brand or homemade tortillas if you have them.
I love red onions with eggs. If you don’t have one handy, chopped white onion will work just fine.
Once the eggs are mostly set, place the flour tortilla on top of the omelette.
Flip the egg and tortilla together so the tortilla is on the bottom.
Add cheese and spinach to one side of the tortilla omelette then fold the other half over the filling. Make sure to crisp up both sides of the tortilla.
I had some cherry tomatoes and an avocado to use up so I made a chunky salsa with them. I added pickled jalapeños, red onion, lime juice, salt, pepper, and fresh mint because I was out of cilantro. The mint added a cool zippy flavor to the salsa.
Breakfast Quesadilla

2 large eggs
1 teaspoon neutral oil
1 tablespoon chopped red onion
2 tablespoons grated cheese (cheddar, pepper jack, feta cubes)
1 handful baby spinach
1 flour tortilla (9-inch)
Guacamole, hot sauce, or salsa for serving
Directions
- Whisk eggs and set aside.
- Heat 1 teaspoon of oil in a 9-inch skillet over medium heat. Add chopped onions and sauté until lightly golden brown. Pour whisked eggs over the onion and cook (adjust heat lower as needed) until mostly cooked through.
- Place flour tortilla over egg and flip so that the tortilla is on the bottom. Add grated cheese and spinach to one side of the omelette. Fold tortilla over to cover the cheese and egg. Flip folded tortilla to brown on the other side. Both sides should be nicely browned and crisp. Remove to a plate and slice into 3 equal pieces. Serve with your favorite hot sauce, salsa, or guacamole.
