This Greek lettuce salad is refreshing and easy to throw together in a short time. The romaine lettuce is so crunchy and the bold herbs add lots of flavor.

Maroulosalata ~ Greek Lettuce Salad

3 romaine hearts, trimmed and thinly sliced (about 10 cups)
2 red onion rings, thinly sliced
6 green onions, thinly sliced
4 ounces Greek feta cheese such as Mt. Vikos, crumbled (about 1 cup)
1/2 cup lightly packed dill fronds + more for serving
1/2 cup lightly packed mint leaves + more for serving
1/3 cup extra virgin olive oil
3 tablespoons fresh squeezed lemon juice
1/2 teaspoon honey
1/2 teaspoon dried oregano
1/4 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground pepper + more to taste
Directions
- Chill washed and sliced romaine leaves in a large bowl (or salad spinner) of ice water for 10 minutes. Add red onion rings during the last few minutes.
- Coarsely chop dill fronds and mint leaves.
- Meanwhile, whisk together the olive oil, lemon juice, honey, oregano, salt and pepper. Taste and adjust with additional lemon juice, salt and pepper.
- Using a salad spinner, drain and spin lettuce (or pat dry gently with a soft kitchen towel). Pat dry onion rings. Place romaine in a large bowl along with the green onions, feta, chopped dill fronds and chopped mint. Drizzle most of the dressing over the salad and toss gently, making sure the greens are well coated. Add more dressing to taste. Scatter onion rings over the top of the salad along with additional dill fronds and mint leaves. Serve right away.

- Everything can be prepped in advance and combined together just before serving.
