Here is a quick and very tasty way to prepare asparagus. A little bit of miso is a magical ingredient that adds richness and depth to this dish. Topped with lots of Parmesan, it’s simply delicious.
Look for thick asparagus spears for this recipe. They hold up very well and keep their crisp texture.
This savory asparagus dish is done in a flash. Serve it as a side dish with meat, chicken or fish from the grill.
Miso Parmesan Asparagus

Ingredients
1 pound thick asparagus spears
1 tablespoon white or light yellow miso
1 tablespoon canola oil or other neutral oil
2 garlic cloves, finely grated
1/2 teaspoon coarsely ground black pepper
1 tablespoons lightly salted or unsalted butter
Kosher salt
1/3 cup finely grated Parmesan
Directions
- Trim off woody ends from asparagus. Wash asparagus, pat dry. Slice spears on a steep diagonal, about 2-inch pieces.
- Whisk together miso paste with 2 tablespoons of water. Set aside.
- Heat oil in a large skillet over medium-high heat. Once very hot, add asparagus, garlic, and pepper. Cook, tossing and stirring often, until the asparagus is beginning to lightly brown around the edges, 2-3 minutes.
- Add butter and miso mixture to the skillet and cook, tossing, until the butter is melted and sauce has coated the asparagus, about 30 seconds. Taste and adjust seasoning with salt if needed (the miso and Parmesan will add another layer of salty flavor so you may not need much salt, if any).
- Transfer asparagus to a platter and sprinkle the Parmesan over just before serving.
